This recipe is one of those that I crave a lot. Fortunately for me, it’s super easy to make and really healthy as well. It’s vegan, dairy free, you can make it gluten free (just use gluten free flour) and enjoy! Here we go:
Ingredients:
- 2 Zucchinis
- 1/2 Red Onion
- 1 clove Garlic
- 1 cup Carrots
- 1 cup Broccoli
- 1 cup Potatoes
- 1 cup Cauliflower
- 1 cup Red Lentils
- 2 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Red Pepper
- 1 tsp Black Seeds
- 1 tbs Olive Oil
- 1 cup flour (add gluten free flour for gluten free recipe)
(Please feel free to add your spices that you like to use, and add or deduct to the amount listed above as you wish)
Directions:
- Preheat oven on 350 F.
- Boil the carrots, broccoli, potatoes, cauliflowers and red lentils for 20 min.
- Meanwhile grate 2 zucchini, add it to a strainer and squeeze the water out.
- Add 1 tsp salt to the zucchini and mix it in.
- Chop 1/2 red onion and 1 clove garlic.
- Drain and mash the veggies that were boiling.
- Add the mash to the zucchini.
- Add the onion and garlic.
- Add 1 tsp black pepper.
- 1 tsp oregano.
- 1 tsp thyme.
- 1 tsp salt.
- 1 tsp red pepper.
- 1 tsp black seeds.
- 1 cup flour. (you can add gluten free flour for gluten free recipe)
- Mix everything together.
- Add 1 tbs of olive oil and mix again.
- Shape them into patties and you can either: Air fry them at 370°F for 10 minutes/fry them with olive oil 10 min each side/Or my favorite, bake them on 350°F for 20 min, flipping them halfway through.
