Idea 5. Date Night – Pesto Pasta.

What’s better than pasta for date night?

Vegan pasta!!!

Super easy, super fast, super nutritious, super delicious, protein rich, 1 pan, no way to f it up pasta. The most important thing is that you enjoy and have more pesto than pasta. Here we go:

Ingredients:

  • 400gr pasta (my favorite pasta right now, is the ‘Rotini made with peas, lentils and cauliflower’ by VeggieCraft. It’s delicious, vegan and gluten free)
  • 1/2 Red Onion
  • 2 cloves Garlic
  • 40gr Fresh Basil
  • 200gr Tofu
  • 200gr Cashews
  • 2 Limes
  • 1 tsp Salt
  • 250ml Coconut Water
  • Handful Pomegranates
  • Lots of Love

Directions:

  1. COOK THE PASTA.
  2. CUT HALF AN ONION INTO SMALL PIECES.
  3. PEEL TWO GARLIC CLOVES.
  4. BLEND EVERYTHING TOGETHER – THE FRESH BASIL, TOFU, ONION, GARLIC, CASHEWS, LIME JUICE, SALT, COCONUT WATER AND LOVE INTO PESTO.
  5. POUR THE PESTO OVER THE PASTA AND MIX IT WELL.
  6. SERVE IT ON A PLATE WITH POMEGRANATES ON TOP, BECAUSE WHAT’S MORE ROMANTIC THAN POMEGRANATE?
  7. ENJOY IT WITH A LOVED ONE, OR ON A DATE WITH YOURSELF.
