Idea 9. Traditional Balkan Spinach Dish with High Protein Twist

Here is my favorite way to cook spinach. Somehow it always starts with dicing onion and garlic. Then add some ginger and your rice and your spices and you simmer it on low. Don’t forget the tofu for a high protein dish, and you are all set! It’s super easy, super nutritious and delicious.

Here we go:

Ingredients with their approximate protein breakdown:

  • 1 Onion ~1 gr protein
  • 2 Garlic Cloves ~0.4 gr protein
  • 1 Ginger ~0.25 gr protein
  • 2 cups boiling Water ~0 gr protein
  • 300gr Spinach ~9 gr protein
  • 1 cup Rice ~4.4 gr protein
  • 1 tsp Oregano ~0.1 gr protein
  • 1 tsp Parsley ~0.2 gr protein
  • 1 tsp Salt ~0 gr protein
  • 1 tsp Turmeric ~0.3 gr protein
  • 1 tsp Cumin ~0.4 gr protein
  • 1 tsp Cayenne Pepper ~0.2 gr protein
  • 2 tbsp Nutritional Yeast ~6 gr protein
  • 200gr Tofu ~24 gr protein
  • Handful of Black Seeds ~2 gr protein
Total protein (approx.)

≈ 48 grams of protein

Notes
  • Most of the protein comes from tofu, spinach, nutritional yeast and rice (small contribution).
  • If your tofu is extra-firm, protein could be higher by 35%.
  • If you swap tofu with seitan, protein could be higher by 85%.

Directions:

  1. Preheat your oven on 425F.
  2. Dice 200gr Tofu and Sprinkle some Black Seeds on them.
  3. Bake them for 30 min on 425F.
  4. Dice 1 Onion.
  5. Peel and Dice 2 Garlic Cloves.
  6. Dice 1 Ginger.
  7. Boil 2 Cups of Water.
  8. Fry the Onion, Garlic and Ginger.
  9. Add 300gr Spinach and 1 cup Rice in the frying pan.
  10. Add the Boiling Water.
  11. Add 1 tsp Oregano.
  12. 1 tsp Parsley.
  13. 1 tsp Salt.
  14. 1 tsp Turmeric.
  15. 1 tsp Cumin.
  16. 1 tsp Cayenne Pepper.
  17. 2 tbsp Nutritional Yeast.
  18. Let it cook on low for ~13 min.
  19. Enjoy.
