Ingredients with their approximate protein breakdown:
2 cups Microgreens ~2 g
1/2 Onion ~0.6 g
1 Garlic ~0.2 g
1 Ginger ~0.1 g
1 Pepper ~1.3 g
200 gr Tofu ~24 gr protein
3 Cherry Tomatoes ~0.5 g
1/4 cup Garbanzo Beans ~4 g
1 Green Onion ~0.4 g
Italian Parsley ~0.3 g
Estimated total protein
≈ 33 grams of protein
Notes*
Most of the protein here comes from tofu and garbanzo beans.
Directions:
1. Fry the pepper (I used long green), the tofu, the onion, the garlic, the ginger and the garbanzo beans together with your oil and your spices. I used extra virgin olive oil and oregano, salt, cayenne pepper, turmeric, nutritional yeast and fresh Italian parsley.
2. Serve it on top of microgreens.
3. Sprinkle 1 green onion.
4. And 1 tsp balsamic or tahini.
5. Enjoy.
