Super Healthy, Super Nutritious, Super Delicious, Super Easy. Put everything in one pan, bake and serve it with tahini.
Here we go:
Ingredients with their approximate protein breakdown:
1 Zucchini ~2 gr protein
1 Pepper ~1.5 gr protein
1 long Carrot ~1 gr protein
1/2 Onion ~0.7 gr protein
100 gr Kale ~4 gr protein
200 gr Seitan ~40 gr protein
2 tbsp Olive Oil ~0 gr protein
2 tbsp Nutritional Yeast ~8 gr protein
1 tbsp Red Paprika ~1 gr protein
1 tbsp Turmeric ~1 gr protein
1 tbsp Cayenne Pepper ~1 gr protein
4 tbsp Tahini ~10 gr protein
Estimated total protein:
≈ 70 gr protein!
Notes*
Where most of the protein comes from here is seitan, tahini and nutritional yeast.
Directions:
1. Soak the veggies in water and baking soda for 15 min.
2. Dice everything and throw them in a baking pan.
3. Pour olive oil on top.
4. Add spices.
6. Cook for 45min (or until they are crunchy).
7. Serve them on a plate with tahini on top.
8. Enjoy.
(I added a slice of baked pumpkin, some nuts, sprouts and pomegranate)
(I also used aluminum paper because I ran out of parchment, but please avoid aluminum as much as possible)
