Idea 22. High Protein, Rainbow, Savory Breakfast. So Good!

Mmmmm this is my heaven for breakfast. I LOVE to make this for other people too. Any time of the day in that matter. It’s sooooo goooood! And super easy. And super nutritious and delicious! AND! Without hurting the innocent and consuming their suffering. Not only that avocado tastes amazing with black pepper, but they also help each other work better in the body. Avocado has healthy fats that help your body absorb nutrients, while black pepper contains piperine, which helps nutrients get absorbed more efficiently. Together, they help your body take in antioxidants from the avocado more easily. Black pepper also supports digestion, and avocado provides fiber, making the combination gentle on the stomach. On top of that, the creamy taste of avocado is balanced by the sharp flavor of black pepper, which is why they’re commonly paired.

So…Here we go:

Ingredients with their approximate protein breakdown:

  • 50 g Micro Rainbow Mix: ~4 g
  • 1 Sweet Potato (medium): ~2 g
  • 1 clove Garlic: ~0.2 g
  • 1 Carrot (medium): ~0.6 g
  • 1 Zucchini (medium): ~1.5 g
  • ½ Cucumber (medium): ~1 g
  • 5 Cherry Tomatoes: ~0.8 g
  • ½ Avocado: ~1.5 g
  • 200 g Tofu (firm): ~24 g
  • ½ cup Chickpeas (cooked): ~7 g
  • ¼ cup Pecans: ~2.5 g
  • 2 tbsp Tahini: ~5 g
  • 1 tbsp Balsamic Vinegar: ~0 g
  • 1 tsp Oregano (dried): ~0.2 g
  • 1 tsp Black Seeds: ~0.6 g
  • 1 tsp Black Pepper: ~0.2 g
Estimated total protein

≈ 52 grams of protein

Notes*
-Most of the protein here comes from tofu, chickpeas, tahini, micro greens, pecans.
-If your tofu is extra-firm, protein could be higher by 35%.
-If you swap tofu with seitan, protein could be higher by 85%.

DIRECTIONS:

  1. DICE THE SWEET POTATOE, ZUCCHINI AND CARROT AND BOIL THEM FOR AROUND 30 MIN OR UNTIL TENDER. (I poke the sweet potato with a fork to check)
  2. MEANWHILE, DICE THE TOFU AND GARLIC, AND PUT THEM IN A BOWL WITH THE MICROGREENS AND PECANS.
  3. ADD THE POTATOE, ZUCCHINI AND CARROT.
  4. DRIZZLE TAHINI, BALSAMIC, OREGANO, BLACK SEEDS AND BLACK PEPPER ON TOP.
  5. ENJOY.
