Say hello to a plate that’s as delicious as it is protein-packed! This creamy cannellini pasta with roasted portobello mushrooms isn’t just delicious food—it’s fuel for your muscles, brain, and day. With legumes, tofu, seeds, and nutritional yeast all teaming up, every bite delivers plant-powered protein to keep you energized and satisfied. Healthy, creamy, and full of goodness—this is pasta you can feel good about!
Here we go:
Ingredients with their approximate protein breakdown:
- 2 Portobello Mushrooms ~8 g protein
- 2 tbsp Olive Oil ~0 g protein
- 1/2 tsp Salt ~0 g protein
- 1/2 tsp Cumin ~1 g protein
- 1/2 tsp Turmeric ~0.5 g protein
- 1/2 tsp Oregano ~0.5 g protein
- 1/2 tsp Parsley ~0.5 g protein
- 230 gr Pasta (my favorite pasta right now, is the ‘Rotini made with peas, lentils and cauliflower’ by VeggieCraft. It’s delicious, vegan and gluten free) ~55 g protein
For the sauce:
- 200 gr Tofu ~24 g protein
- 1 cup Cannellini Beans (cooked) ~15 g protein
- 3 tbsp Nutritional Yeast ~12 g protein
- 3 tbsp Tahini ~8 g protein
- 1 clove Garlic ~1 g protein (small ginger – optional)
- 1 Lemon ~0.5 g protein
- ½ cup Coconut Water ~0.5 g protein
- 3 tbsp Olive Oil ~0 g protein
- 1 tsp salt ~0 g protein
- 1 tsp Red Pepper (for garnish) ~0.2 g protein
Estimated total protein:
≈ 126 g protein!
Notes*
-Most of the protein here comes from the pasta, tofu, cannellini beans, nutritional yeast and tahini, with smaller contributions from the portobello mushrooms and trace amounts from the other ingredients
Directions:
- PREHEAT YOUR OVEN ON 400F.
- PUT 2 PORTABELLO MUSHROOMS ON A BAKING SHEET.
- DRIZZLE 1 tbsp OLIVE OIL ON TOP OF THEM.
- SPRINKLE 1/2 tsp of: SALT, CUMIN, TURMERIC, OREGANO AND PARSLEY. (feel free to use whatever spices you love to cook with)
- DRIZZLE 1 MORE tbsp OLIVE OIL.
- BAKE FOR 40 min, ON 400 f.
- MEANWHILE, BOIL THE PASTA.
- MAKE THE SAUCE. BLEND THE TOFU, CANNELLINI, TAHINI, LEMON JUICE, COCONUT WATER, SALT, OLIVE OIL, GARLIC AND NUTRITIONAL YEAST.
- MIX THE SAUCE WITH THE PASTA. (leave a little for the garnish)
- ENJOY.
