This Fast Protein-Rich Sausage Tahini Salad is a nutritional powerhouse. With ~33 g of protein per serving, it’s excellent for muscle maintenance, satiety, and sustained energy. It’s packed with fiber from a variety of vegetables—salad mix, radish, cucumber, tomato, squash, and peppers—which support digestion, stable blood sugar, and heart health. The colorful veggies also provide vitamins and antioxidants, including vitamin C, vitamin A, potassium, and anti-inflammatory compounds from fresh rosemary. Tahini contributes healthy monounsaturated and polyunsaturated fats, plus minerals like calcium, iron, and magnesium, while the plant-based sausage adds plant-forward protein with mostly healthier fats. Low in refined carbs, quick to prepare in about 10 minutes, and full of flavor, this salad is a fast, filling, and anti-inflammatory meal that supports overall wellness.

- 2 cups Salad Mix: ~2 g protein
- 3 Radish: ~0.5 g
- ½ Onion: ~0.6 g
- 1 clove Garlic: ~0.2 g
- 1 Tomato: ~1.1 g
- 1 small Cucumber: ~1.2 g
- 1 Sausage : ~19 g (I used ‘Field Roast – Apple & Sage Sausages’)
- 1 long Green Pepper: ~1.5 g
- 1 Yellow Squash: ~1.4 g
- 1 tsp Fresh Rosemary ~0.1 g
- 1 tbsp Vinaigrette: ~0.1 g (I used Raspberry Vinaigrette)
- 1 tbsp Olive Oil ~0 g
- 1 tbsp Tahini ~3 g
- 1/2 Avocado ~1 g
- 1 Fig ~0.5 g
Estimated total protein:
≈ 33 g protein!
Notes*
-Most of the protein here comes from the sausage and tahini
Directions:
- Slice and heat the Field Roast apple & sage sausage with the green pepper and yellow squash in a pan for 3–4 minutes until browned.
- While it cooks, toss the salad mix, radish, onion, garlic, tomato, cucumber and fresh rosemary in a large bowl.
- Top with the hot sausage, pepper and squash.
- Drizzle with raspberry vinaigrette, olive oil and tahini.
- Add the avocado and fig.
- Enjoy.
