Idea 43. Chili Crunch Noodles.

I can eat noodles all day every daaaaaaaayyyyyyyyyy. They are my love language. I love making them all sorts of ways, this is an amazing one. I am still tasting them in my mouth….

It’s dairy free, sugar free, cruelty free and you can make it gluten free. It’s just the best ever. Especially after gym when you are hungry af, but you don’t want to spend more than 15 min and 1 pan :) I got you.

Here we go:

Ingredients with their approximate protein breakdown:

  • 140gr Udon Noodles (Noodles of your choice, you can make it Gluten Free. I used Wel Pac Noodles Yokogiri Udon 3 portions) ~33g protein
  • 200 gr Spinach ~6 g protein
  • 200 gr Baby Bella Mushrooms ~6 g protein
  • 3 Green Onions ~0.5 g protein
  • 2 cups Green Beans ~4 g protein
  • 2 Carrots ~1 g protein

Sauce

  • 6 tbsp Soy Sauce (You can use Gluten Free to make a gluten free recipe) ~6 g protein
  • 3 tbsp Sesame Seeds ~5 g protein
  • 3 tbsp Peanut Butter ~12 g protein
  • 3 tsp Chili Crunch – 0 gr protein (I use Homiah Sambal Chili Crunch)
  • 3 tsp Rice Vinegar – 0 gr protein
Total protein (approx.) (I made 3 portions)

≈ 72 grams of protein

Notes*

-Most of the protein comes from the noodles & peanut butter.
-Sesame seeds are one of the richest sources of calcium. (you don’t need milk)
-Spinach is considered a “superfood” because it delivers large amounts of nutrients for very few calories. But spinach also contains substances called oxalates, which can bind to minerals like calcium and iron and make them harder for the body to absorb. Cooking, especially boiling the spinach can reduce the oxalate content. Cooking also breaks down the plant cell walls, allowing your body to absorb more nutrients like beta-carotene and lutein, which are important for eye and immune health.

Directions:

  1. Cook your noodles, according to package instructions, along with the spinach & green beans.
  2. Meanwhile, dice the carrots and add them in the pot.
  3. Dice the mushrooms and the green onion.
  4. Make the sauce.
  5. Rinse the noodles and add the mushrooms, onion & sauce.
  6. Mix everything together.
  7. Enjoy.
