This is probably my favorite recipe in the entire world. It’s also made by my mama, which makes it that much better. This is a very traditional Balkan dish, popular in my country, made vegan, dairy, nut and gluten free so you can enjoy it completely. It’s super easy, healthy and very delicious. It will probably be the best thing you’ve ever tried in your life! Let me know in the comments. Here we go:
Ingredients:
- 7 Peppers
- 1/2 cup of Sweet Peas
- 1/2 cup of Corn
- 1/2 cup of Carrots
- 1/2 cup of Onion
- 1/2 cup of Rice
- 2 tbs of Olive Oil
- 1/2 tbs of Salt
- 1/2 tbs of Cayenne Pepper
- 1/2 tbs of Turmeric
- 1/2 tbs of Oregano
- 1/2 tbs of Thyme
- 1/2 tbs of Curry
(Please feel free to add your spices that you like to use, and add or deduct to the amount listed above as you wish)
Directions:
- Preheat oven on 350 F.
- Add the sweet peas, corn, carrots, onion and rice to a frying pan with 2 tbs of olive oil.
- Add in the spices.
- Cook for 10 min.
- Cut the tip of the peppers and take out the seeds.
- Stuff the peppers with the mixture.
- Close the pepper top with a slice of tomato, potato or eggplant.
- Put the peppers in a baking pan and add boiling water.
- You can add tomato sauce on top.
- Bake for 30 min.
- Flip the peppers on the other side and bake for additional 30 min.
- Wipe your plate clean and enjoy <3
