Idea 5. It’s this easy. High Protein Baked Veggies.

If you are craving something super easy, delicious and nutritious, high protein, super healthy recipe, without harming farm animals, here is something you can try! You can even use the veggies in your fridge that are about to go bad, all you need for high protein rich dish is – don’t forget the tofu (or seitan – super delicious), and you are all set. It’s this easy.

I start by soaking my veggies in baking soda for 15 min (then I can use the skin), cut them into small pieces and bake them all together in 1 pan, for 45 minutes on 400F (or until crunchy). Serve it with tahini and enjoy.

Here we go:

Ingredients with their approximate protein breakdown:

  • 2 Peppers ~2 gr protein
  • 2 Carrots ~1 gr protein
  • 1/2 Red Onion ~0.5 gr protein
  • 200gr Tofu ~24 gr protein
  • 2 cloves Garlic ~0.5 gr protein
  • 1 Ginger ~0.3 gr protein
  • 225gr Red Cabbage ~3 gr protein
  • 2 tbsp Olive Oil ~0 gr protein
  • 1 tbsp Italian Seasoning or how much ever you want ~0.5 gr protein
  • 1 tbsp Red Paprika ~1 gr protein
  • 1 tbsp Turmeric ~1 gr protein
  • 1 tbsp Cayenne Pepper ~1 gr protein
  • 4 tbsp Tahini ~10 gr protein
Total protein (approx.)

~45 grams of protein (recipe is for two people)

Where most of the protein comes from
  • Tofu: ~24 g
  • Tahini: ~10 g
  • Vegetables & spices combined: ~11 g
Notes
  • If your tofu is extra-firm, protein could be higher by 35%.
  • If you swap tofu with seitan, protein could be higher by 85%.

Directions:

  1. Soak the veggies in water and baking soda for 15 min.
  2. Cut them into small pieces and throw them in a baking pan.
  3. Pour olive oil on top.
  4. Add spices (I love spices and I use an amount that feels balanced to me. Feel free to add yours, or whatever is in the kitchen :).
  5. Cook for 45min (or until they are crunchy).
  6. Serve them on a plate with tahini on top.
  7. Enjoy.

If you have left overs, warm those up tomorrow (I prefer the oven, with a cup of coffee), then pour some tahini on that b, and enjoy!
