I have been experimenting with tacos lately, and what I have discovered is that, they are delicious no matter what! But, for me personally, they are better enjoyed, when I know they are nourishing (they have 135 of protein!!! just be conscious and responsible for your daily intakes), they also have a lot of other veggies that are great for you. Kale being a decent protein source (also so f delicious when baked, it gets crunchy), along with the amazing tofu, tahini and black beans. Protein from a dead animal, yes you can get it from there too, but it’s not good for the soul, and the soul knows this. So please don’t run automatic and choose their suffering, when there is another way to get your protein. It’s so easy.
Here we go:
Ingredients with their approximate protein breakdown:
- 4 Taco Tortillas ≈ 8 g protein
- 200 gr Tofu ≈ 24 g protein
- 400 gr Potato Puffs ≈ 8 g protein
- 200 gr Kale ≈ 8.6 g protein
- 200 gr Sweet Potato ≈ 3.2 g protein
- 200 gr Sweet Peas & Carrots ≈ 6 g protein
- 200 gr Green Beans ≈ 3.6 g protein
- 2 tbsp Olive Oil
- 2 tsp Salt
- 2 tsp Black Pepper
- 2 tsp Lemon & Herb
- 4 spoons Poblano Pepper Hummus ≈ 5 g protein
- 200 gr Black Beans (soaked + cooked) ≈ 18 g protein
- 2 Avocado ≈ 6 g protein
- 4 tbsp Tahini ≈ 10.4 g protein
- 4 tsp Mustard
- 4 tsp Pumpkin Seeds ≈ 3 g protein
Estimated total protein:
≈ 135 g protein!!!
Notes*
-Most of the protein here comes from tofu, black beans, tahini & the tortillas.
-If your tofu is extra-firm, protein gets higher by 35%.
–If you swap tofu with seitan, protein gets higher by 85%.
-Kale! Here is why: Very high fiber with very low calories, loaded with vitamins A, C, K, good calcium, iron, magnesium source with strong antioxidants. Also, a decent protein.
Directions: (this is how easy it is)
- PREHEAT YOUR OVEN ON 425 f.
- PUT ON A BAKING SHEET THE KALE, SWEET POTATO, SWEET PEAS, GREEN BEANS, CARROTS, TOFU & POTATO PUFFS.
- DRIZZLE OLIVE OIL, SALT, BLACK PEPPER AND LEMON & HERB. (or use your spices that you like to cook with)
- BAKE FOR 20 min, ON 425 f.
- FOR THE LAST 7 min, PUT THE TORTILLAS HANGING ON THE OVER RACK DIRECTLY. (if you don’t have a tortilla taco already)
- PUT THE INGREDIENTS IN THE TACO.
- DRIZZLE TAHINI AND MUSTARD.
- ENJOY.
