Idea 38. OMG! The Best Vegan Yellow Curry Out There! With 90 gr Protein!

Ok, hear me out. Protein comes from plants. That is a fact! Then animals consume those plants and then they get their protein. Then we take it from them, in the most brutal ways. There is absolutely no need to do that. You just need to make sure you are getting protein daily, but it’s your choice where you get it from. Vitamin B12 is produced by bacteria and microorganisms found in soil and water, which are then consumed by animals. This is also a fact! And then we take their life for it…. There is no need. Choose better. For them, for you, for your soul, for their souls, for the planet, for the better good of everything. It’s super easy.

Here we go:

Ingredients with their approximate protein breakdown:

  • 1 Spaghetti Squash ~5 g protein
  • 2 tbsp Coconut Oil – 0 g protein
  • 1/2 Onion ~0.5 g protein
  • 1 clove Garlic ~0.2 g protein
  • 1 knob Ginger ~0.2 g protein
  • 2 Carrots ~1.2 g protein
  • 1 Red Bell Pepper ~1 g protein
  • 450 gr Tofu ~50 g protein
  • Yellow Curry Paste (I used Mekhala Organic Thais Yellow Curry Paste. You can order it on amazon. It’s spicy so use an amount according to your taste buds) ~2 g protein (depending on amount used)
  • 2 cans Coconut Milk ~10 g protein
  • 1 tbsp Red Pepper ~0.3 g protein
  • 2 cups Broccoli ~5 g protein
  • 1 can Chickpeas ~15 g protein
Total protein (approx.)

≈ 90 grams of protein

Notes
  • Most of the protein comes from tofu, chickpeas & coconut milk.

Directions:

  1. PREHEAT THE OVEN ON 380F.
  2. CUT 1 SPAGHETTI SQUASH IN HALF AND DRIZZLE 1 tsp OLIVE OIL.
  3. FLIP THEM ON THE OTHER SIDE. (it bakes them better)
  4. MEANWHILE, IN A FRYING PAN ADD COCONUT OIL.
  5. ADD THE ONION, THEN GARLIC, GINGER, CARROTS, RED BELL PEPPER, TOFU, YELLOW CURRY PASTE AND MIX.
  6. ADD THE COCONUT MILK, 1 tbsp RED PEPPER, BROCCOLI, AND THE CHICKPEAS.
  7. MIX EVERYTHING AND LET IT BOIL. ONCE IT STARTS BOILING, COVER AND LET IT SIMMER FOR 15 MIN.
  8. ENJOY.
