Idea 55. Veggies With Tofu. 50 gr Protein!

Good morning vegan nation. Today we are keeping it simple, but powerful. Let’s bake all the veggies that are in your fridge, and tofu and voilà! You have a dish that’s high protein, super delicious, super healthy and super easy! Serve it with tahini and enjoy!

I start by soaking my veggies in baking soda for 15 min, dice them and bake them all together in 1 pan, for 45 minutes on 400F (or until crunchy).

Here we go:

Ingredients with their approximate protein breakdown:

  • 1 Red Bell Pepper ~1 g protein
  • 1 Carrot ~0.6 g protein
  • 1 Yellow Squash ~1.5 g protein
  • 200 g Kale ~6 g protein
  • 200 g Tofu ~24 g protein
  • 2 tbsp Olive Oil ~0 g protein
  • 1 tsp Salt ~0 g protein
  • 1 tsp Turmeric ~0.2 g protein
  • 1 tsp Cayenne Pepper ~0.2 g protein
  • 1 tsp Cumin ~0.4 g protein
  • 1 tbsp Nutritional Yeast ~3 g protein
  • 2 tbsp Tahini ~5 g protein
  • 1 Green Onion ~0.3 g protein
  • 1/2 cup Chickpeas ~7 g protein
Total protein (approx.)

~50 grams of protein!!!

Notes*

-Yellow squash is a low calorie, nutrient dense vegetable that offers a range of health benefits. It supports digestion thanks to its fiber and high water content. It’s also good for heart health because it provides potassium, which helps regulate blood pressure, while being naturally low in sodium and fat. It contains antioxidants like vitamin C that help reduce inflammation and protect your cells from damage and contributes to collagen production, which is beneficial for maintaining healthy skin.

Directions:

  1. Preheat your oven on 400F.
  2. Soak the veggies in water and baking soda for 15 min.
  3. Dice them and throw them in a baking pan.
  4. Pour olive oil on top.
  5. Add spices. (I love spices and I use an amount that feels balanced to me. Feel free to add yours, or whatever is in the kitchen :)
  6. Bake for 45min. (or until they are crunchy)
  7. Serve them on a plate with tahini, chickpeas & green onion on top.
  8. Enjoy.

If you have left overs, warm those up tomorrow (I prefer the oven, with a cup of coffee), then pour some tahini on that b, and enjoy!
