Idea 83. Udon Noodles.

The way noodles love me…

Here we go:

Ingredients:

  • 200 gr Udon Noodles (Noodles of your choice, you can make it Gluten Free)
  • 1/2 Onion
  • 1 clove Garlic
  • 1 Carrot
  • 200 gr Broccoli
  • 1 Green Onions
  • 3 small Peppers
  • 2 tbsp Soy Sauce (You can use Gluten Free to make a gluten free recipe)
  • 2 tbsp Teriyaki Sauce
  • 100 gr Plant Based Chick’n
Total protein (approx.) (I made 3 portions)

≈ 35 grams of protein

Notes*

Key Micronutrients:

  • Vitamin C (broccoli, peppers)
  • Vitamin A (carrot, peppers)
  • Vitamin K (broccoli, green onion)
  • Folate (broccoli, peppers)
  • Potassium (broccoli, peppers, onion)
  • Iron (plant-based chick’n, broccoli, udon noodles)
  • Selenium (garlic, onion)
  • Manganese (udon noodles, broccoli)

Directions:

  1. Cook your noodles, according to package instructions
  2. Sauté the onion. Add the garlic, broccoli, peppers, carrots & the plant based chickn. Fry them on medium heat for 5 min.
  3. Add soy & teriyaki sauce.
  4. Add spices like black pepper and salt to taste.
  5. Add the cooked noodles and mix everything.
  6. Enjoy.
