Idea 85. Mayocoba Beans Soup.

Soup is important! From the beginning of time, brewing a good soup just nourished your body. It is incredibly beneficial for your gut because it combines hydration, fiber, and easily digestible nutrients in one meal. When made with whole plant foods like beans, vegetables, herbs, and spices, it helps nourish both your digestive system and your gut microbiome. I can literarily feel when my body needs it, do you? I like to experiment throwing different beans and veggies and see what happens. Literarily whatever I have in the kitchen, with new kind of beans I see in the store and decide to try them out!

Here we go:

Ingredients:

  • 200 gr Mayocoba Beans
  • 2 cup Green Beans
  • 200 gr Tofu
  • 1 Sweet Potato
  • 1 clove Garlic
  • 1 clove Ginger
  • Spices!!! (2 tsp each: turmeric, cumin, basil, oregano, garlic, black pepper, salt and/or whatever you use! Keep tasting it to make sure it’s exactly the way you like it)
  • 3 tbsp Nutritional Yeast
  • 3 tbsp Flaxseed Meal
Total protein (approx.)

≈ 66 grams of protein!!!

Notes*

This soup is:
-Also rich in anti-inflammatory compounds: Ingredients like garlic, ginger, turmeric, and oregano contain natural plant compounds that help support a healthy digestive environment.
-Very gut-friendly because it’s packed with fiber, prebiotics, plant protein, omega-3s, and antioxidants, all of which contribute to a healthy and diverse gut microbiome.

Directions:

  1. SOAK THE BEANS OVERNIGHT.
  2. COOK THEM THE NEXT DAY. BOIL THEM, THEN LET THEM SIMMER FOR 1 hr ON LOW.
  3. ADD THE SWEET POTATO, TOFU, GREEN BEANS & SPICES. SUMMER FOR 30 MORE MINUTES (or until everything is soft).
  4. ENJOY.
