Idea 62. Balkan Breakfast By The Window. Leek Pastry with Turkish Coffee.

Today, as I sit by the window enjoying a quiet breakfast, I feel a deep sense of gratitude for this moment of peace. At the same time, I can’t help but think about how many animals in the world never get to experience anything like it.

I wish this could be a light and cheerful post, but it’s hard to ignore that, while many of us are enjoying simple comforts, there are countless animals living very different realities.

If you’ve ever been curious about exploring more plant-based options, this could be a gentle place to start. Your body makes the same protein eating meat or tofu, so play with tofu and be their change. They don’t have anyone else.

Here we go:

Ingredients with their approximate protein breakdown:

  • 1 Leek ~1.5 g protein
  • 450 gr Tofu ~50 g protein
  • 1 tsp Curry
  • 1 tsp Cumin
  • 1/2 tsp Salt
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Black Pepper
  • 2 tbsp Soy Sauce ~2 g protein
  • 2 tbsp Nutritional Yeast ~8 g protein
  • 2 tbsp Olive Oil
  • 15 Plant Based Egg Roll Wraps ~30 g protein
  • 1 tbsp Sesame Seeds ~1.6 g protein
  • 1 tbsp Black Seeds ~3 g protein
  • 2 tbsp Flaxseed Meal ~3 g protein

Flax Egg Directions:
Combine 2 tablespoons of flaxseed meal (or ground chia seeds) with 6 tablespoons of lukewarm water. Stir well, set aside 10 minutes until it looks like eggs in texture.
*Use this in a recipe as an egg replacer.

Total protein (approx.)

≈ 100 grams of protein!!! 20 gr of protein each pastry!

-Turkish coffee is my favorite coffee in the world. If not my favorite thing in the world.

Directions:

  1. PREHEAT YOUR OVEN ON 400F.
  2. WASH THE LEEK THOROUGHLY!
  3. DICE THE LEEK AND THROW IT IN A FRYING PAN.
  4. ADD YOUR SPICES, NUTRUTIONAL YEAST AND THE SOY SAUCE AND LET IT COOK FOR 10 MIN ON MEDIUM HEAT.
  5. MAKE THE FLAXSEED EGG.
  6. PLACE 3 EGGROLL WRAPS ON TOP OF EACHOTHER LEAVING A LITTLE ROOM BETWEEN EACH.
  7. BRUSH THEM WITH THE FLAXSEED EGG.
  8. ADD THE LEEK MIX IN THE MIDDLE.
  9. WRAP IT.
  10. MAKE 5 OR UNTIL YOU RUN OUT OF INGREDIENTS.
  11. PUT THEM ON A BAKING SHEET.
  12. DRIZZLE OLIVE OIL THEN SESAME SEEDS AND BLACK SEEDS DIRECTLY ON THEM.
  13. BAKE FOR 40 MIN.
  14. ENJOY.
